1 Ham and eggs cake INGREDIENTS • Sliced bread • Sliced cheese • Sliced ham • Spinach • Egg • Butter • Flour • Milk • Salt • Pepper • Nutmeg • Grated mozzarella • Grated parmesan • Nutmeg • Grated mozzarella   METHOD Toast the bread. Place in an oven dish and place slices of cheese, slices of ham and spinach on top. Repeat the step to have two layers of bread, cheese, ham and spinach. Cut the center of a slice of toasted bread with a glass. Place the cut out slice on top of the others andpour an egg into the hole. Add butter, flour, milk, salt, pepper and nutmeg into a pan and heat to make the bechamel sauce. Add mozzarella cheese and grated Parmesan. Pour the mixture over the edges of the bread and between the slices. Bake for 20 minutes at 170ºC (338ºF). 2 Meat and eggs cups INGREDIENTS  1 kg (2 pounds) minced meat (pork+beef);  ½ cup milk;  2 slices sandwich bread;  1 small onion, chopped;  2 eggs;  5 garlic cloves, minced;  salt and pepper to taste;  100 g (3.5 oz) sour cream;  100 g (3.5 oz) cheese;  3 tbsp minced dill;  9 small eggs.   METHOD  Preheat oven to 200C/400F.  Pour milk over bread and set aside for a minute, then squeeze some milk out (not all of it)and add the bread into minced meat.  Add onion, garlic, one egg and a generous amount of salt and pepper.  Separately whisk sour cream, one egg, cheese, dill, salt, and pepper to make the filling.  Roll minced meat mixture into 9 balls and form each one into a basket with borders high enough to hold all the filling and an extra egg.  Add around ½ tbsp of cheese mixture in, top with an egg and bake for 40 minutes. 3 Skillet Breakfast Potatoes INGREDIENTS • 1 tbsp paprika • ½ tsp cayenne • black pepper • 1 tsp dried thyme • ½ tsp kosher salt • 10 small potatoes • 220g chopped bacon • ½ tsp Oil • 6 eggs • Spray bottle   METHOD Wash the potatoes. Cut them into small pieces. Mix the potatoes with chopped bacon, dried thyme, cayenne,kosher salt, paprika, black pepper. Pour the mixture into a baking sheet and bake for 20 minutes at 218ºC (425ºF), turn over and return to bakefor another 15 minutes. Make 6 spaces between the potatoes and pour in 6 eggs. Bake again for 5 minutes at 218ºC (425ºF). 4 Meat and egg baskets INGREDIENTS • 450 g ground pork • 1 tbsp fresh sage minced • 1 tsp fresh thyme minced • 2 tbsp maple syrup • 2 ½ tsp kosher salt • ½ tsp ground black pepper • 1 tsp ground fennel seed • 1 tsp paprika • 1 tsp garlic powder • 6 medium eggs • Tomato • Salt • Muffin tray   METHOD Place the minced meat in a bowl, add sage, thyme, maple syrup, kosher salt, black pepper, fennelseed, paprika, garlic powder and mix. Place the mixture in the holes of each muffin and crush to get a basket. Place an egg in each hole, a slice of tomato on top of each egg and salt.
