Garlic twist: fluffy and aromatic!



This is the perfect alternative to the usual bread!INGREDIENTS For the bread:  340 g (2 ½ cup) bread flour;  102 g (½ cup+2 tbsp) cold milk;  102 g (½ cup+2 tbsp) cold water;  30g (2 tbsp) sugar;  6.5 g (⅓ tbsp) salt;  4.5 g (1 ¼ tsp) dry yeast;  4 g (2 tsp) milk powder;  1 egg;  35 g (2 ½ tbsp) soft butter.   For the garlic butter:  50 g (3 ½ tbsp) butter, soft;  Garlic, minced;  3 g (2 tbsp) parsley, chopped;  ¼ tsp salt.   50 g (4 tbsp) mozzarella, shredded;   METHOD  Combine all of the ingredients, except for the butter, in a large bowl and knead for 10 minutes.  Work butter into the dough, form into a ball and set aside for 1 hour.  Cut the dough into 16 pieces, roll each into a ball and set aside for 20 minutes.  Combine ingredients for the butter (set mozzarella aside), transfer into a pastry bag.  Roll each dough ball into a rope and twist two ropes together.
