Mushroom and eggs casserole: a delicious recipe to try for dinner!

This recipe is perfect for breakfast or brunch and is always a crowd-pleaser!INGREDIENTS  60ml (4 tbsp) olive oil;  300g (1 cup) frozen spinach, thawed and drained;  240g (2 cups) mushrooms, chopped;  8 eggs;  Salt, chili flakes.   METHOD  Make sure to squeeze out any excess liquid from the spinach.  Combine spinach with salt, chili flakes, olive oil and chopped mushrooms.  Divide the mixture between 4 ramekins.  Add 2 eggs into each ramekin, season with more salt and chili, drizzle with olive oil.  Bake at 190C/375F for 8-9 minutes. ------------------------------------ About us: ‘Cookist’ offers you everyday fresh, fun and easy recipes.
