It's perfect for tarts, pies or on toast in the morning breakfast.    INGREDIENTS  1kg of pumpkin  400g caster sugar  Zest and juice of half a lemon  1/2 tsp ground cinnamon  1 tsp ground ginger  Sterilized glass jars METHOD Peel and cut the pumpkin into small squares. Cook it in a pan. Mash all the pumpkin with a fork. Pour it into a pot, add sugar, lemon zest and lemon juice, ground cinnamon, and ground ginger. Mix and wait for it to boil.
