INGREDIENTS 1 egg; 220 ml (7.4 fl.oz) lukewarm milk; 140 g (4.7 oz) flour; ½ tsp baking powder; vanilla powder; vegetable oil. METHOD Preheat vegetable oil to 160C/325F. Combine flour with baking powder and vanilla powder. Add lukewarm milk and an egg. Whisk until no lumps remain. Preheat metal potato masher in hot oil for a few seconds, shake off excess oil just leaving a little greased surface to dip into the batter. Dip potato masher into a batter making sure no to submerge it all the way down, but just covering very bottom of the masher. Quickly transfer potato masher into a hot oil and start shaking it lightly to release crispy fritters from the metal surface. Make sure to do it carefully and help yourself with a fork or a tip of the knife if needed. Cook fritters in hot oil until golden on both sides. Transfer onto paper towels and serve, sprinkled with powdered sugar.
