Crepes - French Pancakes

Crepes are easier to make than you might think. All you need is a bowl and a wooden spoon and for the batter, seven ingredients that I am sure you already have in your pantry. When it comes to fillings the sky is the limit, we like them with sour cherry jam. How do you like yours? :) Ingredients and method: • 290g - 2¼cups all purpose flour • a pinch of salt • 12g - 1TBSP. granulated white sugar • 15ml - 1TBSP. oil • 2 egg yolks • 360ml - 1 ½cup milk, full fat • 300ml -1 ¼cup water • oil, to grease the pan • sour cherry jam, to serve In a large bowl mix the flour with the salt, sugar and oil. Add the egg yolks and mix to combine. Gradually pour in the water and milk. Refrigerate the batter for two hours (or up to overnight). Heat a 12-inch nonstick skillet over medium. Lightly coat with oil. Using a small ladle, pour about 1/3cup of the batter into the center of the hot pan. Tilt and swirl the pan so the batter forms an even layer. Cook until the edges of the crepe starts to curl and the top looks almost dry. Flip and continue to cook for about 15-30 seconds or until you have brown spots over the surface. Remove from heat and place on a plate. Continue to cook and stack the crepes. When ready to serve, spread about a teaspoon of jam all over the crepe, Fold the right and left side towards the middle overlapping slightly. Start rolling away from yourself until you have a roll.
