This recipe is a must-try!INGREDIENTS 1 1/2 large onions, sliced 6 eggs 45g (3 tbsp) shredded cheddar 8g (2 tsp) parsley, finely chopped Salt to taste Black pepper to taste 15ml (1 tbsp) olive oil METHOD Heat olive oil in a frying pan over medium heat. Add onion slices and cook for 3 minutes or until soft. Season with salt and pepper and turn off the heat. Add 6 eggs on top of the onion slices and beat them with a fork until smooth. Season with salt, add chopped parsley and shredded cheddar. Beat again with a fork to combine and return to low heat. While cooking, stir the omelette with chopsticks until the eggs become lumpy. Close with a lid and cook for 3-4 minutes or until no more wobbly. Flip the omelette, put the lid back and continue to cook for 1-2 minutes more.
