Pastry 101: How to make PASTRY CREAM!



A classic fundamental for any serious baker! I'll show you how to make silky smooth pastry cream, and avoid the dreaded scrambled egg. We'll also geek out about the nature of egg protein and how coagulation works! Cheers - Chef Scott ***Jump to 4:05 for the method only*** For more info on everything baking and pastry, visit: _________________________________________ FOR THIS RECIPE YOU NEED: Saucepot: Whisk: Spatula: Sheet pan: Vanilla paste: Devil's Food Kitchen Pastry Cream Recipe: *before starting the recipe, line a half sheetpan with plastic wrap 1. Combine the whole milk, vanilla paste and a small amount of vanilla paste. 2. Bring the milk to a simmer over medium heat. 3. While the milk is heating, combine the egg yolks, cornstarch, and remaining sugar, whisking well until fully combined. 4. Once the milk simmers, add two small additions of it to the egg yolk mixture, whisking well, to warm the eggs. 5. Return all ingredients to the sauce pot over medium heat and whisk continuously until the pastry cream thickens. 6. Allow the pastry cream to just begin to bubble, while whisking. 7. Remove the pastry cream from the heat and whisk for 1-2min. 8. Spread the pastry cream out over the sheetpan lined with plastic wrap. 9. Cover the pastry cream with plastic wrap and chill. Do not freeze! 10.
