Ingredients: For base: White Pumpkin - 1 cup Tamarind - size of a small lemon soaked in 1 cup of water Channa dal - 2 tbsp Toor dal - 1/2 cup Turmeric - a pinch Salt - as needed Jaggery - 1 tsp (optional) For masala: Dhaniya 2 tbsp Chana dal 1 tbsp Urad dal 1/4 tsp Methi seeds 1/4 tsp Red chilies 6 or 7 Melagu 1/4 tsp Coconut 1/4 cup For tempering: Coconut oil - 1.5 tbsp Mustard seeds - 1/4 tsp Red chillies - 3 Curry leaves - few Asafoetida - a pinch Detailed steps: 1. Cook toor dal and channa dal in pressure cooker with 1.5 cups of water and add a pinch of turmeric and salt to this 2. Cook pumpkin (till half) in some water and add little turmeric, salt and asafoetida 3. Dry roast all ingredients for masala and make a paste from the roasted ingredients 4. Cook the tamarind water for few minutes with salt and asafoetida until raw smell of tamarind is gone 5. Add cooked pumpkin, cooked dal, masala and jaggery to this tamarind water and cook for 10 minutes and adjust for salt 6. Temper the ingredients for tempering and add to the cooked kootu/ curry 7. Enjoy with hot rice or roti, idly, dosas!!
