Fried breaded eggplant: how to make them crispy and delicious!

With this recipe you will easily have perfect results every time!  INGREDIENTS • 2 eggplants • 2 mozzarella • flour •2 eggs • 1 tbsp sugar • salt • pepper • breadcrumbs • frying oil   METHOD 1) Prepare the ingredients. Slice the mozzarella and let them drain for at least 30 minutes to dry. Wash the eggplants, dry them and cut into slices as rectangular as possible, about 1/2 cm thick; salt them, lay them in layers in a colander with a load on top and let them drain for 30 minutes, then rinse them under running water and pat them with absorbent kitchen paper. 2) Make sandwiches. Put a slice of mozzarella between two slices of eggplant and place them in flour, then in eggs, beaten with salt and pepper and, finally, in breadcrumbs. Heat a lot of frying oil in a large pot with high sides. 3) Fry and cook. Heat a large amount of oil in a thick pan with high sides. Fry breaded sandwiches with eggplant and mozzarella on both sides, then strain them well and place them on plates coated with absorbent paper to eliminate excess oil.
