1 Oven-baked zucchini fritters INGREDIENTS 1 egg 2 zucchini breadcrumbs  salt  pepper rosemary parmesan   METHOD 1. Grate the zucchini, add parmesan, 1 egg and breadcrumbs. 2. Add the zucchini and pepper to the batter.  4. Mix together the grated zucchini, with salt and pepper. 5. Using a spoon or medium sized ice cream scoop, scoop out about 2 tablespoons of the batter and drop onto the baking sheet. Continue until you run out of the batter. 6. Bake for 15 minutes or until golden. 7. Let it cool for 5 minutes before serving!   2 Pumpkin fritters INGREDIENTS 400g squash salt pepper 2 eggs 20ml olive oil 80g Parmesan cheese 40ml water 130g flour 6g baking powder vegetable oil for frying   METHOD 1. Grate the squash and remove as much liquid as possible. 2. Mix the grated squash with salt, eggs, oil, Parmesan cheese, water, and flour. 3. Add some baking powder and mix until the batter is nice and thick. 4. Drop one teaspoon of the batter in hot oil and let it fry for about 5 minutes. 5. Serve hot.   3 Tomato fritters INGREDIENTS  tomatoes salt  150g flour  2 eggs  50g Parmesan cheese  50g pecorino cheese 80ml milk  8g instant yeast  pepper   METHOD 1. Prepare the batter by combining the flour, eggs, Parmesan cheese, milk and yeast.  2. Add the tomatoes and pepper to the batter.  4.
