INGREDIENTS 1 sheet of puff pastry; 400 g (1 ⅔ cup) ricotta; 100 g (½ cup) sour cream; 40 g (½ cup) parmesan; salt and pepper; cherry tomatoes; 2-3 sprigs of basil; 2 eggs. METHOD Roll out the puff pastry and place it into the cake pan, covering the bottom and the sides. Preheat the oven to 190C/375F. Mix ricotta with eggs, sour cream, parmesan, salt and pepper. Pour on top of the puff pastry, then add cherry tomatoes.
