Vegan Pizza- SOS Free Pizza Crust Recipe

One thing that I used to love before I became an "unprocessed" vegan was pizza. Now that I do not eat cheese or even the flour from which typical pizza crust is made, I thought my pizza days were behind me. I came up with a recipe to allow me to enjoy pizza again without getting back into the pleasure trap. This pizza is gluten free, flour free, no sugar, no oil, no salt, and by a miracle, really tasty. Give it a try! Preheat oven to 400 degrees F Crust Ingredients: 3/4 c baked sweet potato, no skin 3/4 c cooked chickpeas (garbanzo beans) drained 3/4 c cauliflower, steamed soft 2 T flaxseeds, ground down to flaxmeal In a food processor fitted with the S-blade, add all the crust ingredients and process until a smooth dough. (Please note, this dough will not rise and does not have to be tossed. Also, because it has no oil, it is VERY sticky. A silicone baking mat or parchment paper is a must with this recipe.) On a baking sheet lined with a silicone mat or a piece of parchment, spread the dough into whatever shape you like for a pizza crust. Put in the oven for 30-40 minutes. Then, take out of the oven, and using another piece of parchment or another silicone baking mat and a spatula, carefully flip the pizza crust and gently peel and pry it off the first mat being careful not to break it. Return to the 400 degree oven for up to 30 more minutes, checking after about 20 minutes. Topping Ingredients: 1 small can tomato sauce (you won't use all of it) 1/2 t Italian seasoning 3 T sauteed onions and garlic 3 T roasted red pepper 6-8 pieces quartered artichoke hearts Optional: sprinkle of nutritional yeast for "cheesy" flavor After you top your crust with your favorite toppings, you can return it to the oven to heat it up for 2-3 minutes or just enjoy as it.
