Perfect cinnamon rolls: the appetizing brioches to make your guests happy!



INGREDIENTS For the dough: 300g (2 1/3 cup) flour 160ml (2/3 cup) milk 1 egg 30g (2 tbsp) sugar 7g instant dry yeast 3g (1/2 tsp) salt 40g (1/2 cup) butter (room temp)   For the filling: 50g (1/2 cup+ 2 tsp) butter, softened 80g (1/3 cup) brown sugar 30g (1 tbsp) ground cinnamon For the cream cheese frosting: 150g (2/3 cup) cream cheese 30g (3 tbsp) powdered sugar 45ml (3 tbsp) milk 3ml (1/2 tsp) vanilla extract   METHOD In a bowl combine milk, sugar, egg, and dry yeast and whisk well. Add flour and a pinch of salt and stir with a spatula. Cover the dough and let sit for 30 minutes. Add butter and continue to knead the dough for 5 minutes, or till you receive an elastic dough. Transfer the dough into a bowl greased with oil, cover, and let rise in a warm place for 1 hour or until doubled in size. In a small bowl combine brown sugar, cinnamon. Transfer the dough onto a working surface, shape it into a rectangular. Brush the dough with softened butter and sprinkle it with cinnamon mixture. Roll the dough starting from the narrow side. Cut the dough into 9 pieces using dental floss and arrange them into a baking pan lined with parchment. Cover and let rise for 45-60 minutes more. Bake in the preheated to 170C/350F for 22-25 minutes. Meanwhile, prepare the frosting: In a separate bowl combine softened cream cheese, icing sugar, milk, and vanilla. Mix well and set aside.
