Printable Version: https://www.thecookingfoodie.com/recipe/White-Pizza--Pizza-Bianca-Recipe Makes 4 small pizzas Ingredients: *the measurements are in metric cups* 3½ cups (500g) flour 1½ tsp active-dry or instant yeast 1 tsp sugar 1 tsp salt for crust + 1/2 tsp for cheese mixture 2 tbsp olive oil + 4 tbsp for toping + for cooking spinach and onions ¼ cup (60 ml) + 2/3 cup (160 ml) warm water 1¼ cups (300g) ricotta cheese (home made ricotta recipe: https://www.youtube.com/watch?v=FKL5CPLyI8A) ½ cup (50g) grated mozzarella + 2 tbsp topping on every pizza ½ cup (50g) grated parmesan + 2 tbsp topping on every pizza 1 artichoke heart (canned/marinated) 5-6 cherry tomatoes 7oz (200g) spinach 2 medium size onions 1/2 tsp pepper 1 tsp dried basil/oregano Directions: 1. In a medium bowl, dissolve yeast and sugar in 1/4 cup of warm water. Let stand until yeast dissolves, about 10 minutes. In a large bowl combine flour and salt. Pure the yeast mixture and the rest of the warm water into the flour. Pour olive oil and mix until dough forms. 2. Turn dough out onto a lightly floured surface and knead until very smooth, about 8 minutes. If the dough to sticky add more flour. 3. Place the dough in an oiled bowl, cover with towel or plastic wrap and let it rise until doubled in volume, about 2 hours. When the dough rises, knead it around a bit to push the air out with your hands. Divide into 4 equal pieces, form into balls and place the balls on floured surface, cover and let rest for another 30 minutes 4. preheat oven to 480F (250C) with the baking try inside. 5. meanwhile make your favorite topping: cook spinach over low-medium heat for 3-4 minutes. Slice onions into strips and cook over low-medium heat until caramelized (about 6-8 min). cut in half cherry tomatoes. Cut into 4 artichoke heart. 6. For the cheese base: combine ricotta, mozzarella, parmesan, salt and pepper. 7. Roll the dough out into 10-inch (25 cm) 8. Choose your topping: •spinach pizza bianca: Spread 1/4 of the cheese mixture, cover with cooked spinach and top with 2 tbsp of grated parmesan, 2 tbsp of grated mozzarella. Drizzle 1 tbsp olive oil •artichoke pizza bianca: Spread 1/4 of the cheese mixture, place 4 pieces of artichokes, top with 2 tbsp of grated parmesan and 2 tbsp of grated mozzarella. Drizzle 1 tbsp olive oil •caramelized onions pizza bianca: Spread 1/4 of the cheese mixture, cover with caramelized onions, top with 2 tbsp of grated parmesan and 2 tbsp of grated mozzarella. Drizzle 1 tbsp olive oil. •Cherry tomatoes pizza bianca: Spread 1/4 of the cheese mixture, place 6-7 pieces of cherry tomatoes and top with 2 tbsp of grated parmesan, 2 tbsp of grated mozzarella.
